Brennan's School of Cake Decorating are pleased to be able to offer a new range of Courses developed by PME and taught by our Senior Professional Cake Decorators.


Introducing The PME Professional Diploma Course :
This Course is designed for anyone anticipating selling Cakes to Family and Friends or as a Commercial Business : Suitable for Beginners enthusiasts and professionals.
It is a combination of Basic techniques and Creative Styling combined with a professional approach.
The PME Professional Diploma Course is Divided into Three Modules :
Sugarpaste, Royal Icing and Piping, Sugar Flowers
Each module is a Complete Separate Course. The modules do not have to be taken in any particular order and it is not essential to complete all three modules - however The Masters Certificate will be awarded when all three modules have been completed.


Sugarpaste
This Course is designed to help students develop their own Cake decorating skills and ideas. For many this additional confidence provides the opportunities to decorate Cakes as a Business.
It will cover : Basic Techniques, Coating, Crimping and Embossing, Fabric Effects, Textured Drapes, Frills, Ribbons, Bows & Sugar Embroidery, Modelling Fun Figures, Textures, Inlay & Applique, Stacked Cake Design & Handling, Designing Celebration Cakes & Colour Balance, Basic Business Guidelines, Copyright & License
Class Duration : 5 weeks. One full day each week : 11 am to 4.30 pm

It will cover : Basic Techniques, Unwired & Wired Flowers, Fantasy Flowers, Roses, Orchids, Lilies, Cherry Blossom, Gerbera, Chrysanthemums, Freesia, Dahlia, Garden Pinks, Black Berries, Seasonal Flowers, Alternatives to sugar flowers, Arranging sugar flowers, Decorating cake stands & Knives, Costing & pricing
Class Duration : 5 weeks; One full day each week : 11 am to 4.30 pm

Wilton Course
The Wilton Course is the perfect way to start. You're going to love learning to decorated cakes. The Wilton Method is tried and true so everyone can succeed.
You can look forward to making many great things with the help of you Wilton Instructor. Your first class will be the beginning of a pastime you can enjoy for a lifetime.

Classes are limited to a maximum of 10 students.
Courses are priced at euro; 120.00 and run over four two hour lessons on a Saturday


The Wilton Diploma Course is Divided into Three Levels :

Wilton 1 : Discover Cake Decorating
This Wilton Class is the perfect place to start. Your Instructor will show you the right way to decorate step by step.

Class Duration : 4 weeks
One lesson each week : 11 am to 1.00 pm

Wilton 2 : Flowers and Borders
Build on the skills you learned in Course 1. New Flowers, Elegant Borders, finishing with an impressive Flower Basket Cake using the Interwoven Basketweave Technique.

Class Duration : 4 weeks
One lesson each week : 11 am to 1.00 pm
Course fee : euro; 120.00

Wilton 3 : Fondant and Tiered Cakes
In this Course you will move your decorating skills to a higher level. The techniques you will learn include stringwork, cornelli lace Brush embroidery and you will complete the course by assembling and decorating a tiered cake.

One lesson each week : 11 am to 1.00 pm
